Pt 2. The Mudgee Crush

Each day after harvesting at Moothi Estate we truck the fruit to “Mudgee Wines” to get our crush onMudgee Wines is located about 5 km North of Mudgee.  This site is where the majority of our wine making and storage processes will occur.

Each small batch has unique characteristics and needs to be added to the previous crush.  Some are thrown in as whole bunches, others are crushed in their own buckets before adding to the mix.  Some of the later picked bunches had started to dry a little and upon crushing were reminding me of nanna’s raisiny fruit cake.  With gentle handling, these characteristics should be present in the final product.  This is but a small part of what will come together for our blend.

Next stop, Beaurepaire Ridge, to continue our Cabernet collection and be on the lookout for some Petite Verdot.
